Description

An interesting variation on rhubarb jam

Ingredients

1Kilogramrhubarb
225Gramdried block figs
100Gramcandied lemon peel
1 lemon
1Kilogramwhite sugar

Notes

Boiling jam can cause very nasty injuries. Please consult a good book for general jam-making techniques.

Instructions

Wash, trim and cut the rhubarb into pieces.
Chop the figs very small.
Shred the candied lemon peel.
Squeeze the juice from the lemon and put all the ingredients into a bowl.
Cover and leave to stand for 24 hours.
Transfer to a stainless steel pan and heat gently, stirring well, until all the sugar has dissolved.
Bring to the boil and boil hard until a set is obtained.
Pot and seal.
